Ingredients
1/2 cup chopped celery(stalks
& leaves)
1/2 cup chopped onions
1/2 cup chopped unpeeled red
apple
2 T butter
2 T flour
2 tsp curry powder
1 tsp salt
1/2 tsp pepper
1/2 tsp sugar
pinch of ginger (optional)
1/2 bay leaf
2 cups chicken stock
2 cups coarsely chopped
chicken
Preparation
Saute celery,onion, & apple in butter until clear & tender.Blend in dry ingredients. Gradually add stock, stirring until thickened. Add chopped chicken. Serve with rice,chutney,toasted coconut,slivered almonds, chopped peanuts,hard boiled eggs,chopped cooked bacon, & raisins.
