Ingredients
1 1/4 c. brown rice flour
1/2 c. tapioca flour
1/4 c. potato starch
1 t. baking powder
1/2 t. baking soda
1/2 t. xanthan gum
1 t. cinnamon
1/2 t. nutmeg
1/2 t. allspice
1 c. sugar
1/3 c. oil
1/4 c. milk (cow, soy, rice)
1 t. gluten free vanilla
1/2 c. walnuts, chopped
Preparation
Mix together the flours, baking powder, baking soda, xanthan gum and spices in a bowl; set aside. Combine the sugar, oil, milk and vanilla in a medium bowl. Pour the dry ingredients into the wet and blend together. Add the walnuts and blend until just incorporated. Place by the rounded tablespoon on a greased cookie sheet. Bake at 350 degrees F for 18-20 mins.
