Ingredients
4 Eggs
2 cups sugar
1 1/2 cups vegetable oil
1 teaspoon Vanilla
1 can pumpkin (15 oz.)
2 cups flour
1 teaspoon salt
2 teaspoons Baking Soda
1 teaspoon Cinnamon
1/4 teaspoon Nutmeg
1 cup chopped walnuts
Icing for cake:
1 stick Butter
8 oz. bar cream cheese
1 box powder sugar
1 teaspoon vanilla
Chopped walnuts (if not added to cake batter)
Mix above and ice cooled cake.
Preparation
Beat eggs,sugar,oil,pumpkin and vanilla together. Mix dry ingredients and walnuts then stir into wet ingredients.
Pour into two large loaf pans or divide evenly into smaller loaf pans filling 3/4 full.
Bake at 350 degrees for 1 hour or less if using smaller pans or making cupcakes.
