Ingredients
4 cups; tart apples … peeled, cored, cut into 1/2-inch cubes
4 TBL; juice of fresh lemon
1 cup (ea); red & green seedless grapes … cut in half
celery … 2 cups … chopped semi-fine
4 green onion … chopped
1 cup; mayonnaise
1/4 cup; apple juice
2 tsp; sugar (or sugar-free sweetener)
1 cup; walnuts … chopped
salt & pepper
romaine or bib lettuce … separated by leaves.
Preparation
Combine mayonnaise, sour cream, lemon juice, apple juice, & sweetener in large bowl.
Fold in apples, grapes, celery, green onion, & walnuts.
Add salt & pepper to taste.
Chill mixture for one hour if desired.
Arrange lettuce leaves on individual plates. Spoon salad over. Serve.
