Ingredients
3/4 c Flour
1/4 c Cornstarch
1/2 tsp salt
1/2 tsp baking powder
1/4 tsp baking soda
3/4 c buttermilk
1/4 c milk
6 tblsp vegtable oil
1 egg - separated
1 tblsp sugar
1/2 tsp vanilla
Preparation
Combine Dry ingredients in medium bowl In small dish, combine buttermilk, milk, oil & egg yolk. In small bowl beat egg white to almost soft peak. Sprinkle in sugar, beat until peaks are firm & glossy. Beat in vanilla. Pour buttermilk mixture into dry ingrdients. Whisk until just mixed. Fold in egg whites.
