Ingredients
2 cups all-purpose flour
4 teaspoons baking powder
1/4 teaspoon salt
2 tablespoons sugar
1 1/2 cups milk
3 tablespoons vegetable oil
3 tablespoons butter, melted
1 tablespoon vanilla
2 eggs, separated
Preparation
In a large mixing bowl, sift together flour, baking powder, sugar and salt.
In a separate bowl, mix together milk, oil, vanilla and egg yolks.
Mix wet ingredients into dry.
In a separate bowl, beat egg whites until soft peaks form. (temper batter with 1/3 egg whites) Gently fold egg whites into batter.
Pour 1/3c batter onto hot waffle iron. Cook until golden (2 min.); serve hot.
