Ingredients

2 eggs, separated

1 ½ cups buttermilk

½ cup vegetable oil

1 ¾ cups flour

1 tbsp baking powder

1 tbsp sugar

1 tsp salt

Preparation

In a small bowl, beat egg whites until stiff but not dry. Set aside.

In a large bowl, beat egg yolks until thick and lemon-colored; continue beating while adding milk and oil.

Add dry ingredients and beat until smooth. Fold in beaten egg whites. Cook in waffle iron.
