Ingredients
1/2 c.w.w.vinegar
1 1/2 T curry powder
2 t. cumin
3/4 t. cardamom
3 T fresh ginger
1/4 t. cloves
1 T mustard seed
1/4 t dried red chilis
1 T olive oil
Preparation
Combine above ingredients in grinder.
Add to 2 lb. diced lamb, beef, or chicken. Let stand 1 to 2 hours. Heat 2 T olive oil in pan. Add 2 1/2 c chopped onion; sauté until limp. Add meat and brown. Add 16 0z. jar tomatoes with juice and 1 medium cinnamon stick.
Let simmer 1 to 2 hours. Season with salt and pepper, cilantro, 1 T mustard seed. Serve with rice.
