Ingredients
1/4 cup Vinegar (determine taste by type)
1/2 tsp. Salt
1 tsp. Dijon Mustard
3/4 cup Oil
Herbs, garlic, shallots or citrus zest optional
Preparation
Dissolve salt in vinegar. Add dijon mustard which acts as emulsifying agent binding together the oil and vinegar. Whisk in the mustard until well combined, then slowly pour the oil in a steady stream, whisking constantly, until the dressing is blended and emulsified. Add pepper and more salt to taste.
