Ingredients
2 Heirloom red Tomatoes
2 Heirloom yellow Tomatoes
2 Heirloom orange Tomatoes
1 small Red Onion
1 Cucumber
1 Garlic Bud
1 Sprig Fresh Oregano
Fresh ground peppercorns
2 oz Extra Virgin Olive Oil
1 oz Aged Balsamic Vinegar or to taste
4 oz Feta Cheese
12 Kalamata Olives
1/2 Lemon
Preparation
- Wedge the tomatoes.
- Cut the onion and cucumber to match the tomato wedge size.
- Mince the garlic and the oregano leaves.
- Toss all the above ingredients together with a liberal grinding of peppercorns.
- Drizzle with olive oil and retoss.
- Drizzle with Balsamic and retoss.
- Plate and top with Feta , Kalamata olives and a light squeeze of lemon.
