Ingredients

2 Heirloom red Tomatoes

2 Heirloom yellow Tomatoes

2 Heirloom orange Tomatoes

1 small Red Onion

1 Cucumber

1 Garlic Bud

1 Sprig Fresh Oregano

Fresh ground peppercorns

2 oz Extra Virgin Olive Oil

1 oz Aged Balsamic Vinegar or to taste

4 oz Feta Cheese

12 Kalamata Olives

1/2 Lemon

Preparation

  1. Wedge the tomatoes.
  2. Cut the onion and cucumber to match the tomato wedge size.
  3. Mince the garlic and the oregano leaves.
  4. Toss all the above ingredients together with a liberal grinding of peppercorns.
  5. Drizzle with olive oil and retoss.
  6. Drizzle with Balsamic and retoss.
  7. Plate and top with Feta , Kalamata olives and a light squeeze of lemon.
