Ingredients

8 semi-sweet chocolate squares

1 1/2 cups white sugar

2/3 cup water

8 egg yolks

4 tbsp cognac

2 cups heavy cream

Preparation

  1. Melt chocolate over hot water in double boiler. Meanwhile, boil sugar and water into syrup. Scrape chocolate into mixer bowl. Pour hot syrup over chocolate. Mix and then drop in eggs one at a time. Add cognac, mix a bit, and then cool to room temperature.
  2. Whip cream until stiff peaks form. Fold chocolate mixture into cream. Spoon into a large bowl and chill for 4 hours.
