Ingredients
2 cups diced seeded peeled cucumber
2 lbs fresh tomatoes
1 cup chopped celery
1 cup chopped green onions
1/2 bell pepper (or Anaheim pepper)
1 piece of sliced white bread torn into pieces
2/3 cup olive oil
1/4 cup white wine or rice vinegar
1 tbs chili powder
2 teaspoons kosher salt
2 tablespoons finely chopped fresh garlic
Jalapeños if desired - 1-2
Fresh basil to taste
Fresh parsley to taste
Fresh oregano to taste
OPTIONAL:
1 tablespoon fresh cilantro
Preparation
Place 1 cup cucumber, 1/2 cup celery, 1/2 cup green onions and half of the bell/Anaheim pepper in small bowl and reserve.
Put the other vegetables in a large bowl: cucumber, tomatoes, celery, green onions,bell/Anaheim pepper, bread, garlic, jalepenos, basil and oregano/cilantro. Add the chili powder and salt to this.
Working in batches and adding olive oil as you go, coarsely puree the large bowl’s ingredients in a blender. Pour into large bowl. Mix in reserved vegetables.
Season to taste with coarse salt and freshly ground pepper. Chill at least 6 hours and up to 1 day.
