Ingredients
1 1/2 C yellow cornmeal
1/2 C all-purpose flour
1 T baking powder
1/2 tsp baking soda
3/4 tsp salt
1 1/2 C buttermilk
1 egg, lightly beaten
3 T bacon drippings (veg. oil)
3 T maple syrup
Preparation
Preheat oven to 425 F. Lightly greases an 8 in. cake/pie pan. Combine the dry in a large bowl, combine the wet, mix all well. Pour batter into prepared pan. Bake til golden, 15-20 mins. Cut into 8 wedges, serve warm w/butter & honey.
