Ingredients
(for the loaves)
2 pounds Ground Venison
1 pound Ground Beef
1 ½ cups breadcrumbs
2 large eggs
1 large Red Onion, chopped
2 Jalapeno Peppers, chopped
4 Garlic cloves, chopped
½ cup Cilantro, chopped
3 Tbsp olive oil
2 Tbsp butter
2 tsp sea salt
1 tsp ground black pepper
(for the glaze)
1 cup ketchup
2 Tbsp Worcestershire sauce
2 Tbsp honey
2 Tbsp grated ginger
Preparation
- Preheat oven to 350 degrees.
- Sauté onion, jalapeno peppers, and garlic in the olive oil and butter, until the onions caramelize.
- Transfer the onion mixture to a large bowl. Allow to cool slightly.
- Whisk ketchup, Worcestershire sauce, honey, and ginger in a medium bowl. Reserve ½ cup to glaze the tops of the loaves.
- In the large bowl, combine the remaining glaze mixture with the slightly cooled onion mixture. Add all other loaf ingredients. Mix.
- Divide mixture in half and transfer to two standard bread pans (10.75W x 6.5L).
- Spread remaining honey-ginger glaze on top of loaves and bake at least 1 hour (until center temperature registers 160 degrees).
