Ingredients
Whole Chicken
Sea or Kosher Salt
Preparation
Thaw, wash, and dry whole chicken.
Put in a stalk pot and cover with cold water. Add two tablespoons of salt to the water. Put the lid on the stalk pot and cook on high until a roaring boil. Do not take the lid off for any reason. This process usually takes 25 minutes.
Once there is a roaring boil, take the pot off the burner and let sit for 3 hours. Once gain, do not take the lid off for any reason.
After three hours, the chicken is done.
