Ingredients
6 ozs bacon chopped
1 onion chopped
2 celery stalks diced
2 small carrots diced
2 zucchini diced
1 14 oz can chopped tomatos
2 cans white beans
3 cups chicken broth
1/2 tsp salt
pepper
6 cps fresh chopped spinach
1/4 cup Parmesan cheese
Preparation
Place bacon in large saucepan over medium heat. Cook 5 minutes or until crisp. Add onion, celery and carrot, cook 5 minutes. Add zucchini, garlic cook 3 minutes. Add tomatoes, beans, broth, salt pepper. Bring to boil, reduce heat and simmer 10 minutes. Stir in spinach. Top with Parmesan cheese.
