Ingredients
1 zucchini 1 or 2 carrots 2 onions 4-6 cloves garlic 5 cans diced tomatoes 4 cups veggie stock 2 tsp. chopped basil 2 tsp. allspice salt and pepper sugar
Preparation
Saute onions and garlic in butter or oil. Add veggies, saute a few more minutes. Add can tomatoes with juice, a pinch of sugar, basil, and salt and pepper. Boil 5 or 10 minutes. Add veggie stock and allspice, simmer 45 minutes. Blend soup to smooth with blender.
