Ingredients

One small onion

One large ripe tomato

Fresh Basil

3 to 4 cloves garlic

Balsamic Vinegar

Salt

Pepper

Olive Oil

Four Tilapia Filets

Preparation

Preheat oven to 425

Dice Onion, tomato, garlic and basil and mix together

Add olive oil, balsamic vinegar, salt and pepper to taste

Mix and set aside to marinate for 15 to 30 minutes

Place filets in a glass baking pan

Paint filets with olive oil and cover with marinated vegetable mixture

Bake until fish is white and firm (approximately 15 minutes)

Serve with Couscous and fresh steamed broccoli
