Ingredients
1 garlic clove; minced
1/2 cup onion diced
1/2 cup diced zuchini
1/2 sliced mushrooms
1/2 cup corn (frozen is fine)
1/2 tsp cumin
1/2 tsp crushed red pepper
1 cup cooked brown rice
1 can black beans, rinsed and drained
6 Whole wheat or white flour tortillas
1 cup Shredded low fat Monterey Jack cheese (Optional)
Preparation
Saute garlic, onion, zuchini, mushrooms and corn until they lose their crispness (don’t overcook) Add Cumin and red pepper; stir in rice and beans.
Sprinkle cheese on a tortilla (if desired) place large spoonfull of filling; roll up and place in baking dish sprayed with cooking spray. COntinue with all tortillas; cover with more cheese (if desired)
