Ingredients
Meatballs
4 veggie patties ( chopped )
1 1/2 cups panko bread crumbs ( set aside 1/4 c to roll veggie balls )
2 eggs
1 tablespoon olive oil
1 tablespoon dijon
2 tsp worstershire
2 tsp balsamic vinegar
1 tablespoon g. Romano
1 tsp salt
2 tsp b. sugar
1 tsp pepper
2 tsp onion powder
Mix all ingredients with a fork. Roll into meatballs, dip in water then roll with panko. bake at 350 for 20-25 min
Sauce
1 can rotel tomatoes ( or 3- 4 fresh chopped )
1 small red onion diced
1 red bellpepper ( thinly sliced )
2 tablespoons olive oil
1 c shitake mushrooms ( enoki’s are yummy too )
4 - 6 leaves fresh basil
2 c veggie stock
3 oz of tomato paste
garlic, salt, pepper to taste
