Ingredients
2 oz sliced, fresh mozzarella cheese
1Tbsp chiffanade fresh basil
1/2 ea Roma tomatoes
1/3 ea roasted red pepper
2 slices grilled eggplant
2 slices grilled zucchini
1 spinach or tomato tortilla
Preparation
assemble all ingrediants on the spinach or tomato tortilla and roll into wrap form. Slice in half and serve.
