Ingredients

1 med. onion, cut in half rings

2 cloves garlic, diced

1 green pepper, chopped

8 Italian veggie sausages

1 cup long grain rice

2 cups vegetable broth

2 oz. grated cheddar cheese

salt, pepper, and paprika to taste

Preparation

In a small sauce pan, saute onions and garlic in a little bit of olive oil until the onions are barely translucent.

Mix cooked onions and garlic with all other ingredients in a Romertopf clay pot°.

Bake at 425 degrees for 70 minutes. Remove lid and continue baking for an additional 10 to 15 minutes.

°If you do not have a Romertopf clay pot, the casserole can be made in a pyrex or ceramic casserole dish. You may need to add more liquid halfway through cooking.
