Ingredients

1 tbl of olive oil

1 clove of garlic

1/2 onion ( chopped fine)

2 cups of vegetable stock

1 cup of lentils

2 carrots - diced

1/2 red bell pepper

2 stalks of celery - sliced

Black pepper

Red pepper flakes

greens such as spinach or escarole

fresh parsley or basil

1 can of diced tomatoes

1/2 pkg. Frozen mixed vegetables

Preparation

In a stock pot saute onion and garlic in oil. Add vegetable stock, lentils, carrots, celery bell pepper, and spices. Cook 35 minutes. Add frozen mixed vegetables and greens. Cook 10 more minutes.
