Ingredients
5 T olive oil
2 onions, chopped
3 large garlic cloves, chopped
6 C water
1 1/2 C lentils
4 med. carrots, thinly sliced
1 T dried summer savory
2 14 1/2 oz. cans stewed tomatoes (with juices)
Preparation
Heat oil in soup pot over medium heat. Add onions & garlic; saute til just translucent about 3 mins. Add water, lentils,& savory. Bring to simmer. Reduce heat to med-low, cover & cook 20 mins. Add tomatoes, carrots & any other veggies you like. Cover & cook til lentils & carrots are tender, about 10 minutes.
Serve with Sriracha sauce. Sour cream too if you like (or cheese).
