Ingredients

olive oil

1 yellow onion, chopped

1 tblsp. garlic, chopped

peppers, chopped (I used about 1/4 each of a yellow, orange and red pepper)

tomato, chopped (I used about 1/4 c quartered grape tomatoes because that is what I had in the fridge)

1 can black beans, rinsed & drained

4 eggs

milk (for scrambled eggs)

4 tortillas (flour)

1 c. tomatillo salsa verde

1/4-1/2 c. Hatch enchilada sauce

cheese, cheddar or monterey jack

Mexican oregano

salt and pepper, to taste

cooking spray

9x13 baking dish

Preparation

Preheat oven to 450

Saute onions, garlic, peppers and tomato, season to liking. Add black beans Scramble eggs and add to onion, pepper mixture. spray baking dish with cooking spray spread tomatillo sauce on bottom of pan. Place 2 tortillas on bottom, spread egg, beans, pepper mixture over tortillas. Cover with cheese (to your liking) and spread with more tomatillo sauce, cover with 2 tortillas, enchilada sauce and sprinkle with cheese. Bake for 20 minutes or until bubbly.
