Ingredients
1 Onion, diced
2 cloves Garlic, minced
1 Green Pepper, Diced
1 Red Pepper, Diced
1 can(sm) Corn Niblets,
1 can(med) Tomatoes, diced
1 can(lg) Black Beans
1 can(med) Beans in Tomato Sauce
3(or more) tsp Chili Powder
Preparation
- In large pot, saute onions over medium heat for about 2 mins.
- Add remaining veggies and garlic and saute for another 5 mins.
- Add Corn, Tomatoes, Chili Powder and Beans
- Stir together and cook covered on Med - Low heat for about 20 mins. Stir occasionally.
- Serve with sprinkle of grated Parmesan Cheese and Whole Wheat Bread
