Ingredients

1 Onion, diced

2 cloves Garlic, minced

1 Green Pepper, Diced

1 Red Pepper, Diced

1 can(sm) Corn Niblets,

1 can(med) Tomatoes, diced

1 can(lg) Black Beans

1 can(med) Beans in Tomato Sauce

3(or more) tsp Chili Powder

Preparation

  1. In large pot, saute onions over medium heat for about 2 mins.
  2. Add remaining veggies and garlic and saute for another 5 mins.
  3. Add Corn, Tomatoes, Chili Powder and Beans
  4. Stir together and cook covered on Med - Low heat for about 20 mins. Stir occasionally.
  5. Serve with sprinkle of grated Parmesan Cheese and Whole Wheat Bread
