Ingredients

3 cups onion chopped

2 1/2 cup red pepper chopped

1 1/2 cup celery chopped

3 garlic cloves chopped

1/3 cup red wine vinegar

2 Tbs molases

1 1/2 tsp basil

1 1/2 tsp oregano

1 tsp thyme/coriander

salt, pepper

1/2 tsp chili powder

1 bay leave

2-3 Tbs olive oil

2 cans red beans with liquid

1 big can of tomatoes in tomato juice

1 can white beans

2/3 cup cashews toasted

Preparation

Put first 4 ingredients into a big pan with hot olive oil. Saute for about 8 min. Add next 8 ingredients, beans and tomatoes. Cover and simmer 20 min. Remove bay leave. Add cashews.
