Ingredients
one bag organic mixed beans
one green bell pepper, chopped
one red bell pepper, chopped
one yellow bell pepper, chopped
one onion, chopped
2 cans tomato sauce
1 can chopped tomatoes
one clove garlic, chopped
chili powder to taste (depending on how hot you like your chili)
cumin to taste
hot sauce to taste
salt
pepper
2 Tbs. olive oil
Preparation
soak dry beans according to directions on package (usually overnight). Saute onion, peppers and garlic in 2 Tbs. olive oil. Add tomato sauce, chopped tomatoes and spices. Rinse soaked beans, being careful to check for stones, then add to sauce. Simmer for minimum of 1 1/2 hours, and adjust spices to taste.
