Ingredients
1 cup of TVP (textured vegetarian protein) or any fake meat substitute
1 medium white onion, chopped
1 medium red bell pepper, diced
3 garlic cloves, minced
1 (14 oz.) can black beans, do not drain
1 (14 oz.) can kidney beans, do not drain
Insert your favorite bean here; I add many types!
1 (14 oz.) can diced tomatoes
½ cup frozen corn kernals
1-2 tablespoons ground cumin
1 tablespoon of ground cinnamon
1 tablespoon olive oil
Preparation
-Heat oil in a pot over medium heat. Add cumin and cook until fragrant. Add garlic, onion, and red bell pepper, and cook for 5 minutes. Stir in remaining ingredients, including bean juices. Bring to a boil, and simmer for 40-45 minutes
