Ingredients

VEGETABLES ITALIAN STYLE

1 eggplant

2 lg. onions

1 green pepper

2-3 zucchini

2 T oil

1# mozzarella cheese

2 c. marinara sauce

salt & pepper

1/4 tsp oregano

3 T grated parmesan

Preparation

Peel eggplant & onions. Slice. Slice zucchini. Cut green peppers into squares.

Heat oil; add vegetables and cook until barely tender.

Slice mozzarella.

Layer vegetables, mozzarella and marinara sauce in a greased baking dish. Sprinkle w/salt, pepper & oregano. Finish w/sauce and sprinkle w/parmesan.

Bake at 350º for 30 min.
