Ingredients

1 med cucumber, peeled and chopped

1 cup grape tomatoes, halves

1/2 cup chopped red onion

1/4 cup chopped bottled roasted red bell peppers

1 1/2 tablespoons chopped pitted kalamata olives

1 1/2 tablespoons chopped fresh dill

1 tablespoon grated lemon rind

1/4 cup hummus

2 Mediterranean style white flatbreads (such as Toufayan)

2 romaine lettuce leaves

1 1/2 tbsps crumbed feta cheese

Preparation

  1. Combine first 7 ingredients in a bowl, toss well.
  2. Spread 2 tablespoons hummus onto each flatbread, top with 1 lettuce leaf. Spoon vegetable mixture evenly onto half of each flatbread, leaving a 1/2 inch border around edges. Top evenly with feta, fold flatbread in half over vegetable mixture.
