Ingredients

2 c. brown rice

chicken broth

1-2 Tbsp. soy sauce

zuchinni

mushrooms

1 can water chestnuts

walnuts

4 to 5 pieces crystalized ginger

Broccoli

carrots

Monteray Jack Cheese, grated

Preparation

Stir fry zuchinni in soy sauce until soft. Add mushrooms, water chestnuts,walnuts and crystalized ginger. Stir until light brown. Layer rice, vegetables, zuchinni, broccoli, carrots, then remaining vegetables. Put grated Monteray Jack Cheese on top and bake for 45 minutes.
