Ingredients
2 yukon gold potatoes
1 small onion
2 teaspoons crushed garlic
2 teaspoons olive oil 1 broccoli spear
1 plum tomato
fresh thyme
1 tbsp jarlsberg cheese
3 eggs
salt
pepper
Preparation
slice potatoes and onion saute with garlic on medium heat for 10 minutes,slice broccoli spear into 6 equal pieces place on top of potatoe onion garlic mixture, crack eggs mix pour over other ingredients keep heat on medium, chop thyme one tsp, sprinkle over top of egg mixture,cover and cook for 5 minutes, slice tomato place on top, shred cheese sprinkle over top cover and turn heat off let sit 5 minutes, slice and serve
