1/2 C vanilla non-dairy milk

1 t apple cider vinegar

2 1/2 C water

1/2 C pumpkin puree

1 t vanilla extract

2 1/2 C whole wheat pastry flour

3/4 t baking soda

2 T ground flax seed meal

1 T pumpkin pie spice

1/2 t kosher salt

3/4 C vegan semi-sweet chocolate chips

vegan powdered sugar

pure maple syrup

non-hydrogenated cooking spray or earth balance

Directions

  1. In a small bowl, mix milk and vinegar. Let sit for 5 minutes.

  2. In a large bowl, combine pumpkin, water, vanilla, flax seed meal, and milk mixture.

  3. Whisk together salt, pumpkin pie spice, flour, and baking soda in a medium bowl. Add to wet ingredients and stir until just combined. Let sit 10 minutes and then stir again. Mix in chocolate chips.

  4. Spray a griddle or large skillet with cooking spray or earth balance and heat to medium. After first set of pancakes, turn heat down to medium low. 5. Serve pancakes with sprinkled powdered sugar and maple syrup. Enjoy!
