Ingredients

1 to 2 Tablespoons extra-virgin olive oil

2 onions, chopped

3 stalks bok choy, diced

3 carrots, diced

2 garlic cloves, diced

12 ounces fresh spinach, cleaned, stems removed and coarsely chopped

3 cups COOKED brown rice

1 teaspoon paprika

1/2 cup Bragg’s Liquid Aminos, or other soy sauce

3 Tablespoons peanuts

Preparation

  1. In a large skillet saute onions, bok choy, carrots and garlic in olive oil until vegetables are tender. Add spinach and continue to saute until spinach is wilted (2-3 minutes).

  2. Add cooked brown rice to the mixture. Add seasonings and peanuts.
