Ingredients

1 can Black Beans

1 small onion (to taste), chopped

Salt

Pepper

1-2tbsp oil, olive or grapeseed

Preparation

Heat a nonstick pan over medium high heat.

Add oil.

Add onions, salt, and pepper to taste and saute until just transparent.

Open can of beans and rinse once so some of the liquid in the can remains but most is gone. Then dump can into pan. Raise heat to high. With the back of a fork, gently mash some of the beans as the dish fries. The dish will thicken up because of the starch in the beans. When it is the consistency you want, turn off heat and serve.

Applications: side dish, filling for wraps and burritos, add to scrambled eggs or omlettes, on top of rice, as a scoopable dip, etc!
