Ingredients

PANCAKE MIX:

1 1/2c old-fashioned rolled oats

1 1/4c whole grain flour

tsp baking soda

tsp salt

2 tbsp ground flaxseed + 6 tbsp water

1 3/4c soymilk (soured with tsp of apple cider vinegar)

tsp vanilla extract

liquid stevia extract to taste (optional)

Non-stick cooking spray

TOPPING:

pure maple syrup diluted with almond or soy milk OR

unsweetened applesauce and a sprinkle of cinnamon

Preparation

Mix ground flaxseed with water in a bowl. Let stand for a few minutes, while mixing dry ingredients in a separate bowl. Back to bowl containing flaxseed and water: add rest of wet ingredients. Mix together, then combine wet and dry ingredients. Stir until just mixed. If batter is too thick, add more soymilk until consistency desired is reached. Spray non-stick cooking spray on heated pan. Cook pancakes over medium heat until bubbles appear on first side: flip and cook second side.
