Ingredients

2 15oz cans black beans drain and rinse

1 15oz can cuban style black beans

1 package soychorizo

1 onion diced

4 cloves garlic, minced

1 1/2 cups diced bellpeppers- i used frozen mixed strips

1 cup mushrooms

1 cup frozen corn

2 15oz cans diced tomatoes with juice

1 cup vegetable broth

1 med to large zuccini, grated or diced

1 1/2 tsb cumin

1 tbs chili powder

sea salt to taste

Preparation

use a 4 quart or larger, i used a 5 quart. put everything in crock pot stir. cook on low for 6-8 hrs. you could use any veggies you like.

taste at the end of cooking for salt, or spiciness.
