Ingredients
1 1/2c. whole-wheat pastry flour
1/2 c. rolled oats
2 tsp baking powder
1 tsp baking soda
1/4 tsp fine salt
2 tsp ground cinnamon
Few dashes of ground nutmeg
Few dashes of ground ginger
1 c. unsweetened applesauce
1/2 c. raw sugar
1/4 c. brown sugar
1/4 c. pure maple syrup
1 c. chopped McIntosh apples (when in season, or any other apple substitute)
Preparation
*Preheat oven 350ºF. Grease or spray a muffin tin or paper liners, if using.
*In a large bowl, whisk flour, oats, baking powder, baking soda, salt, and spices together until well combined.
*Add applesauce, sugars, and maple syrup, then stir until almost combined.
*Add apple pieces, stirring until just combined.
*Spoon the mix into muffin cups until they are 3/4 full.
*Sprinkle additional oats and brown sugar on top, if desired.
*Bake for 18 to 25 minutes, or until a toothpick inserted in the center comes out clean.
*Transfer to a wire cooling wrack.
