Ingredients
2 apples
1 1/4 lb veal scallops ( from loin)
6 ozs chicken stock or canned broth
2 tablsps oil
Preparation
Peel core and seed apples Save peels Slice the apples in half and cut each half into very thin slices. Put the apples in a baking dish moisten with tiny drop of oil and bake at 400 degree oven till tender Meanwhile S & P veal. Add remaining oil to saute pan and heat over high heat. Saute the meat with apple peels until nicely colored about 3 to 4 mins. Discard the peel Transfer the veal and oil to a shallow casserole Continue to cook for 5 mins in 400 degree oven Remove the meat from the casserole and keep warm Pout stock into a saucepan and boil down by 1/3 Strain into a bowl or measuring cup To serve, pleace veal scallops on individual serving plates and garnish with apples arranged in a fan shape around the veal Pour small amount of reduced cooking liquid over each serving 360 calories per serving
