Ingredients

4 medium sweet potatoes

2 tablespoons of skim milk

1 tablespoon of salted butter

2 stalks fresh vanilla beans - scraped

2 tablespoons of boiling liquid reserved

Salt and pepper, to taste

Preparation

Wash, peel and dice sweet potatoes. Put diced sweet potatoes in medium saucepan in enough water to cover. Bring to a boil over high heat, reduce heat to simmer, stir occasionally & simmer until tender.

Combine skim milk, salted butter and scraped vanilla bean in small saucepan and heat.

Drain potatoes (reserving 2 tablespoons boiling liquid) in colander. Run potatoes through a food mill and put into large bowl. Add heated milk, butter and vanilla mixture, reserved boiling liquid, salt and pepper to taste. Use a 4-ounce ice cream scoop to neatly plate Vanilla Sweet Potato Mashed.
