Ingredients
1# Lean Pork for Stew
1 1/2 tsp ground cumin
1/4 tsp salt
1/4 tsp cinnamon
1/8 tsp cayenne
2 tsp vegetable oil
1 1/3 C coarsley chopped yellow onion
1 C green bell pepper chopped
2 cloves garlic minced
3 C peeled and cubed potatoes
1 C V-8 Vegetable juice (no salt)
1/2 C water
1 - 14 oz Mexican style stewed tomatoes
1 - 10 oz package frozen corn, thawed and drained.
Cilantro
Sour cream (optional)
Preparation
Trim meat and cut into cubes
Combinecumin, salt, cinnamon, cayenne in a brown paper bag and toss meat in until coated.
Heat medium size stock pot and add oil. Add spiced meat and cood for 5 minutes. Add onion, pepper, garlic and saute for 3 minutes. Stir in potatoes, v-8, water and tomatoes. Bring to a boil, cover, reduce heat and cook for 25 minutes, simmering. Stir in corn. Simmer for 30 minutes more. Chop Cilantro and sprinkle on as you serve. A dollop of sour cream is a nice option for those who like it
