Ingredients
1 can (15 ounce) citrus salad
1 ripe avocado
1 tablespoon lemon juice
1 small red onion
1 tablespoon sugar
1 medium cucumber, peeled and thinly sliced
1 medium sweet red pepper, seeded and diced
1 10 ounce package fresh baby spinach
1 8 ounce container plain yogurt
salt and pepper, to taste
Preparation
- Drain Citrus Salad, reserving syrup for dressing.
- Peel and slice avocado, then dip in lemon juice to prevent darkening.
- Peel and slice red onion into slivers, and sprinkle with sugar.
- For yogurt dressing: In small bowl combine reserved syrup with yogurt and stir until smooth.
- At serving time, arrange individual salad plates by placing a base of spinach topped with an arrangement of the citrus salad, avocado, red onion, cucumber, and red pepper.
- Drizzle with yogurt dressing.
