Ingredients

•1 can (15 ounce) citrus salad

•1 ripe avocado

•1 tablespoon lemon juice

•1 small red onion

•1 tablespoon sugar

•1 medium cucumber, peeled and thinly sliced

•1 medium sweet red pepper, seeded and diced

•1 10 ounce package fresh baby spinach

•1 8 ounce container plain yogurt

•salt and pepper, to taste

Preparation

  1. Drain Citrus Salad, reserving syrup for dressing.
  2. Peel and slice avocado, then dip in lemon juice to prevent darkening.
  3. Peel and slice red onion into slivers, and sprinkle with sugar.
  4. For yogurt dressing: In small bowl combine reserved syrup with yogurt and stir until smooth.
  5. At serving time, arrange individual salad plates by placing a base of spinach topped with an arrangement of the citrus salad, avocado, red onion, cucumber, and red pepper.
  6. Drizzle with yogurt dressing.
