Ingredients
2 lbs. Maine Yellow Eye Beans
¾ lbs. Salt Pork
1 Pint Maple Syrup
3 Medium Yellow Onions
4 Tablespoons Molasses
1 Teaspoon Dry Mustard
½ Teaspoon of Ground Ginger
2 Teaspoons Kosher Salt
1 Teaspoons Ground Black Pepper
1 Teaspoon Old Bay Seasoning
1/3 Cup Baking Soda
Water to cover
Preparation
Pick over beans, removing stones and any discolored beans. Rinse and soak beans 8 hours in cold water and Baking Soda. Wash Salt Pork and pat dry. Score pork like a checkerboard and place in bottom of crock pot. Quarter Onions and place in crock pot with all remaining ingredients. Add cold water to cover. Place crock pot on low for 15 hours. Check at about 10 hours and add water if needed.
