Ingredients

1 ear fresh corn, kernels cut off

5 small or 3 large umeboshi (Japanese pickled plums), pitted and chopped

1/4 red onion chopped fine

1 Tbsp. mirin or sweetened rice vinegar

Preparation

Combine corn kernels and red onion. Combine ume and mirin or sweetened rice vinegar. Mix all together. Add salt and/or red pepper if desired.
