1/4 cup garlic, chopped
1/2 cup onion, chopped
2 cups orange juice, freshly squeezed
1/2 cup lime juice, freshly squeezed
1/2 cup olive oil
4 teaspoons kosher salt (don’t use table or sea salt!)
1 tablespoon black pepper, freshly ground
2 teaspoons cumin
2 teaspoons dried oregano
1 tablespoon fresh cilantro, chopped (also known as coriander)
Preparation
#1 Mix together garlic, onion, orange juice and lime juice.
#2 Heat oil in pan until just starting to smoke. Cover your hands and arms with oven mitts and use a pot lid as a shield, then carefully pour orange juice mixture into pan. It will splatter a fair bit but without this sudden heat, the marinade isn’t the same. Cook for 5 minutes or until onions are tender. #3 Season with remaining ingredients, let cool for a few moments and then pour into a blender. Pulse three or four times to blend. #4 Cool and use as a marinade for meat or vegetables or it can make a wonderful salad dressing as well.
