Ingredients
1 1/2 cups of flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 cup vegetable shortening
1 cup sugar
1 cup light brown sugar
2 eggs (large)
1 tsp vanilla extract
2 cups old fashioned oats
2 cups Rice Krispies
1 cup sweetened coconut flakes
1 bag (6 oz) semi-sweet chocolate chips
Preparation
- Preheat oven to 350 degrees
- Place parchment paper on cookies sheets
- In a bowl, blend flour, baking soda, baking powder and salt, set aside
- In a mixer set to medium high beat the vegetable shortening, sugar and light brown sugar, mix for 3 minutes. Add eggs one at a time. Once the mix starts to blend together add in the vanilla extract.
- Turn the mixer to low and add the flour mixture from the other bowl, mix for a few minutes until dough starts to form.
- Turn mixer off.
- Stir in the oats, Rice Krispies, coconut and chocolate chips.
- Form balls with 2 tbsp of dough and place on baking sheet 2 inches apart.
- Bake at 350 degrees for 10 min.
