Ingredients
2 lbs Mushrooms, sliced
1 lb Peppers, roasted and diced
1.5 lb Onion, diced
1.5 lb Squash, diced
1 lb Tomatoes, diced
¾ lb Eggplant, diced
1 qt Vegetable stock
1 C Tomato paste
¾ C Chili powder
3 Tbl Cumin
2 lb Tofu, large dice
Garlic
Beans
Salt & pepper
Preparation
Brown eggplant and tofu separately and hold
Brown mushrooms in large pot
Add squash and onions and continue to cook
Add tomato paste, tomatoes, seasonings and continue to cook
Add stock, cooked eggplant, cooked tofu, beans, roasted peppers and continue to cook
Season to taste
