Ingredients
2 cups of thick Greek yogurt or plain yogurt
8 cloves of garlic, minced
2 Lg cucumbers peeled, grated, drained
¼ C Fresh Mint chopped
1 tablespoon of olive oil
2 teaspoons of lemon juice
Salt and Pepper to taste
Preparation
Lightly salt the grated cucumber and place in a colander to drain for 15 minutes. Add to the rest of the ingredients in a large bowl and mix well. The longer you let this refrigerate the more the garlic will add to the flavor.
