Ingredients 1 1/4 lbs russet potatoes 4 tbsp butter 1 cup finely grated irish white cheddar cheese 1/4 cup milk 1/4 cup fresh parsley, finely minced 1/3 cup scallions or chives, chopped salt and white pepper to taste Preparation Scrub and peel potatoes.
